This wine is the result of a plot selection which has given its complex and mineral profile, while preserving a certain freshness

Grape varieties planted and yields:

100 % Melon de Bourgogne – 35 hL/ha


Soil type:

Sands on amphibolites
South-East oriented plateau


Age of the vines:

30 years


Method of vinification:

Harvesting by hand with a sorting of the grapes

Fermentation with indigenous yeasts

15-24 months aging in an underground tank

No clarification – Possibly light filtration 


Tasting notes:

Nose of white fruit with notes of almonds
On the palate we find an expression of structure, volume and minerality derived from the schist and saline terroir
Slightly stony notes come through but lovely luscious character remains

Best served at a temperature of 11°C
Enjoy it now or within the next 10 years at least

Grandlieu crayfish curry on a bed of fettuccine with light cream,
Farm milk veal chop roasted with its fat and fried potatoes with mushrooms,
Crispy veal sweetbreads with Bordier butter and parsley
