Sand over weathered predominantly amphibolite rock
Located on a south-east facing plateau
After harvesting by hand and a sorting of the grapes,
The press juices are settled in order to obtain great aromatic finesse
Fermentation starts with indigenous yeasts
The malolactic fermentation is carried out to add complexity and volume on the palate
Over the winter, the wine remains on its lees which are given a regular stirring (bâtonnage)
Bottling takes place at the end of spring
This atypical wine offers up a complex array of aromas. The lactic aromas are softened by the wine’s fruity character with notes of white peach very much to the fore. The terroir lends this wine its minerality.
We appreciate the wine’s softness on entry, its volume and opulence, as well as its length on the palate.
Best served at a temperature of 11° C
